Abstract
Maintain high market prices for farmed fish as production increasese with industry growth. Find means of preserving product from times of excess harvest without diminishing the brand value. Finally, to foster wider recognition for the product differentiation between open ocean farmed U.S. grown products and foreign imports. The objective is to demostrate that a range of products and processes can be prepared to provide non-perishable Kona Kampachi to the consumer, while maintaining the high product value and protecting the brand.
